Ingredients:

  • 2 slices of wholesome bread
  • 1 cup cooked chicken chunks (grilled, roasted, or leftover)
  • 2 tbsp mayonnaise or plain yogurt
  • 1 tsp Dijon mustard (optional)
  • 1/4 cup lettuce leaves or mixed greens
  • 2 slices of tomato
  • 1 slice of cheese (optional, cheddar or Swiss works well)
  • Salt and pepper, to taste
  • 1 tsp butter or olive oil (for toasting)

Instructions:

  1. Prepare the Chicken Filling:
    • In a bowl, mix the cooked chicken chunks with mayonnaise or yogurt.
    • Add Dijon mustard, salt, and pepper to taste. Mix well until the chicken is coated.
  2. Assemble the Sandwich:
    • Lay one slice of bread on a clean surface.
    • Spread the chicken mixture evenly on the bread.
    • Top with lettuce leaves, tomato slices, and a slice of cheese (if using).
    • Cover with the second slice of bread.
  3. Toast the Sandwich:
    • Heat a skillet or sandwich press over medium heat.
    • Lightly butter or drizzle olive oil on the outer sides of the sandwich.
    • Place the sandwich in the skillet and toast for 2-3 minutes on each side, pressing gently with a spatula, until the bread is golden brown and crispy.
  4. Serve:
    • Slice the sandwich in half and serve hot or at room temperature.
